Italian Vegetable Focaccia Sandwich

INGREDIENTS

round focaccia bread (10 to 12 inches in diameter)

cups shredded mozzarella cheese (8 ounces)

cups deli marinated Italian vegetable salad, drained and coarsely chopped

STEP I:
  • Sprinkle bottom half of focaccia with 1 cup of the cheese. Spread vegetables over cheese. Sprinkle with remaining cheese.STEP II:2
  • Top with top of bread. Cut into wedges.

    EXPERT TIPS

    Focaccia, an Italian bread shaped into a large, flat round, is often drizzled with olive oil and topped with Parmesan cheese before baking.
    Look for focaccia in the bakery, deli or frozen-food section of the grocery store.
    Using already-shredded mozzarella cheese is certainly easy. For slightly different Italian flavor, shred provolone cheese, which has a slightly smoky flavor, or Fontina cheese, which has a subtle nutty flavor.
